Leftover Rice Recipe | Rice Vada – Medu Vada Recipe | Instant Crispy Rice Vada Recipe

Ingredients: 1. Leftover / Cooked Rice – 1 Cup 2. Yogurt / Curd (Dahi) – 1/2 Cup 3. Chopped Onions – 1/2 Cup 4. Semolina (Rava or Suji) – 1/2 Cup 5. Finely Chopped Green Chillies – 1 tsp 6. Chopped Curry Leaves – 1 tsp 7. Grated Ginger – 1 tsp 8. Salt as per taste – 1 tsp

9. Oil to Deep as required for Frying

Method: 1. In a mixer grinder, take 1 cup of leftover Rice and 1/4 cup of Curd (Dahi)and blend into smooth paste. 2. Then add 1/2 cup of Semolina (Rava or Suji) followed by remaining 1/4 cup of Curd (Dahi) and again blend into smooth batter. 3. Remove the batter in a mixing bowl, then add 1/2 cup of chopped Onions, 1 tsp of grated Ginger, 1 tsp finely chopped Green Chillies, 1 tsp of roughly chopped Curry Leaves, 1 tsp of Salt and mix well. 4. Thick Rive Vada batter is ready. 5. Now take one small Katori, grease with Water and take small portion of batter and flatten on the katori and make hole in the centre to give the Medu Vada shape. 6. There is one more method to make Vada, just dip and grease your hands with Water and take small ball sized portion and make round and then make small hole in the centre and directly pour into the hot Oil. 7. Pour all the Vada’s into hot Oil and deep fry it until golden and crispy. 8. The one which we made with katori needs to be poured into the Oil just with the help of hands. 9. Once golden and crisp, remove the Vadas on kitchen towel.

10. Leftover Rice Medu Vada is ready to serve hot with Chutney and Sambar.
