Ingredients:
– For the puris: semolina (sooji), all-purpose flour, salt, oil, and water
– For the spicy mint flavored water (pani): mint leaves, green chili, ginger, tamarind paste, black salt, roasted cumin seed powder, salt, and cold water
– For the filling: boiled potatoes, boondi (tiny fried gram flour balls), and tamarind chutney

Recipe:
– To make the puris, mix semolina, all-purpose flour, salt, and oil in a bowl. Gradually add water and knead the dough until smooth. Let it rest for 10 minutes, then roll out small balls and deep fry until they puff up and turn golden brown.
– For the spicy mint flavored water, blend together mint leaves, green chili, ginger, tamarind paste, black salt, roasted cumin seed powder, salt, and water. Strain the mixture and chill in the refrigerator.
– To assemble the Pani Puri, gently tap the top of a puri to make a hole, then fill it with a small piece of boiled potato, a pinch of boondi, and a drizzle of tamarind chutney. Dip the filled puri into the spicy mint flavored water and enjoy!
