Ingredients:
2 large onions, thinly sliced
1 cup besan (gram flour)
2-3 green chilies, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon mustard seeds
1 teaspoon cumin seeds
A pinch of asafoetida (hing)
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon coriander powder
1/2 teaspoon garam masala
Salt to taste
2 tablespoons oil
Fresh cilantro for garnish
Water as needed

Recipe:
In a bowl, mix besan, turmeric powder, red chili powder, coriander powder, and salt. Gradually add water to form a smooth, lump-free batter.
In a pan, heat oil and add mustard seeds, cumin seeds, and asafoetida. Once the seeds start spluttering, add the sliced onions and sauté until they turn golden brown.
Add the ginger-garlic paste and green chilies to the onions and cook for a few minutes.
Gradually add the besan batter to the pan, stirring continuously to avoid any lumps. Cook the mixture for 5-7 minutes until the besan is cooked through and the curry thickens.
Sprinkle garam masala and garnish with fresh cilantro before serving.
