Ingredients:
– 2 medium-sized bitter gourds (karela)
– 2 medium-sized potatoes (aloo)
– 1 onion, finely chopped
– 2-3 green chilies, finely chopped
– 1 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon coriander powder
– Salt to taste
– 2 tablespoons oil
– Fresh coriander leaves for garnish

Recipe:
1. First, wash and peel the bitter gourds. Remove the seeds and chop them into small pieces. Similarly, peel the potatoes and chop them into small cubes.
2. Heat oil in a pan and add the chopped bitter gourd and potatoes. Stir fry them on a medium flame until they turn golden brown.
3. Add the chopped onions and green chilies to the pan and sauté until the onions turn translucent.
4. Now, add the turmeric powder, red chili powder, coriander powder, and salt to the pan. Mix well and let the vegetables cook for a few more minutes.
5. Once the vegetables are cooked through and the spices are well incorporated, remove the pan from heat.
6. Garnish with fresh coriander leaves and serve the Karela Aloo Stir Fry hot with roti or rice.
