Rava Cake in Pressure Cooker – Sooji Cake Rec…

Ingredients: Rava / Sooji / Semolina – 1½ (Unroasted) Thick curd (Not sour) – ¾ cup Sugar – ¾ cup (Powdered) Vegetable oil – ¾ cup Milk – ½ cup Egg – 1 Baking powder – ¾ tsp Baking soda – 2 pinches

Salt – 2 pinches

Steps: Crack in the egg to a bowl. Add sugar and oil. Mix well using a whisk. Add rava, baking powder, baking soda, salt, curd and milk. Mix well using a spatula.

Let it rest for 10 minutes.

To bake the cake, heat a pressure cooker with 2 cups of salt. You can reuse this salt for 2-3 times. Level the salt by gently shaking the cooker.

Cover without the whistle and heat up the salt on high heat for 5 minutes.

Grease an 8-inch baking pan with vegetable oil. Line it with butter paper. Mix the batter well and transfer to the pan. (The batter should not be more than three fourth of the pan)

Level it with a spatula. Gently tap the pan to get rid of air bubbles.

Place an inverted steel plate as a base on the salt. Place the baking pan on to the base and cook covered without the whistle on a medium flame (on the large burner). Bake for 60 minutes or until the toothpick inserted at the center comes out clean. (Mine got cooked in 50 minutes. So keep an eye after 45 minutes) Transfer the pan from cooker and allow it to cool. Unmould once it cools down. Remove the butter paper. Sprinkle some powdered sugar on top.

Notes:
– This can be baked in a preheated oven also at 375°F/200°C for 30 minutes. Check after 20 minutes. Bake till until the toothpick inserted at the center comes out clean.
