Ingredients:
– 1 cup of quinoa
– 2 cups of water or vegetable broth
– 1 tablespoon of olive oil
– 1 onion, finely chopped
– 2 cloves of garlic, minced
– 1 bell pepper, diced
– 1 zucchini, diced
– 1 cup of cherry tomatoes, halved
– 1 teaspoon of cumin
– 1 teaspoon of paprika
– Salt and pepper to taste
– Fresh cilantro for garnish
– Lime wedges for serving

Recipe:
1. Rinse the quinoa under cold water, then add it to a pot with 2 cups of water or vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the quinoa is tender and the liquid is absorbed.
2. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant.
3. Add the bell pepper, zucchini, and cherry tomatoes to the skillet. Cook until the vegetables are tender.
4. Stir in the cooked quinoa, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
5. Remove from heat and serve the quinoa mixture in bowls. Garnish with fresh cilantro and serve with lime wedges on the side.
