Ingredients:
– 2 cups of basmati rice
– 1 tablespoon of ghee
– 1 teaspoon of cumin seeds
– 1 onion, finely chopped
– 1 green chili, finely chopped
– 1 carrot, diced
– 1 potato, diced
– 1 cup of frozen mixed vegetables
– 1 teaspoon of garam masala
– Salt to taste
– Fresh cilantro, for garnish

Recipe:
1. Rinse the basmati rice until the water runs clear, then soak for 30 minutes.
2. In a large pan, heat the ghee over medium heat and add the cumin seeds.
3. Once the cumin seeds start to sizzle, add the chopped onion and green chili.
4. Cook until the onions are translucent, then add the diced carrots and potatoes.
5. After 5 minutes, add the frozen mixed vegetables and garam masala.
6. Drain the soaked rice and add it to the pan, stirring gently to combine.
7. Pour in 4 cups of water and season with salt.
8. Cover the pan and bring to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, or until the rice is cooked through.
9. Fluff the rice with a fork and garnish with fresh cilantro before serving.
