Ingredients:
– 1 cup urad dal
– 1 cup chana dal
– 1 cup dried red chilies
– 1/2 cup sesame seeds
– 1/4 cup cumin seeds
– 1/4 cup black peppercorns
– 10-12 curry leaves
– 1 tsp asafoetida
– Salt to taste
– 2 tbsp oil

Recipe:
1. Start by dry roasting the urad dal and chana dal in a pan over medium heat until they turn golden brown and aromatic. Remove from the pan and set aside to cool.
2. In the same pan, dry roast the dried red chilies until they puff up and become crisp. Set aside to cool.
3. Next, dry roast the sesame seeds, cumin seeds, and black peppercorns until they release their aroma. Remove from the pan and let it cool.
4. In the same pan, add the curry leaves and roast until they turn crispy. Set aside to cool.
5. Once all the roasted ingredients have cooled down, transfer them to a mixer or food processor. Add the asafoetida and salt, and grind everything together into a coarse powder.
6. Heat the oil in a small pan and pour it over the ground mixture. Mix well to incorporate the oil evenly.
7. Your flavorful Idli Podi, or Gun Powder, is ready to be served! Enjoy it with steaming hot idlis or dosas.
