Ingredients:
– 1 kg chicken or mutton
– 3 cups basmati rice
– 2 onions, thinly sliced
– 1/2 cup yogurt
– 1/4 cup ginger-garlic paste
– 1/4 cup fresh mint leaves
– 1/4 cup fresh coriander leaves
– 4 green chilies
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp garam masala powder
– 1/2 tsp cumin seeds
– 1/2 tsp black pepper
– 1/2 cup cooking oil
– Salt to taste

Recipe:
1. Rinse the basmati rice and soak it in water for 30 minutes. Drain and set aside.
2. In a large pot, heat the cooking oil and add the cumin seeds. Allow them to sizzle for a few seconds.
3. Add the sliced onions and cook until they are golden brown. Remove half of the onions and set aside for garnish.
4. Add the ginger-garlic paste to the pot and cook for 2-3 minutes. Then, add the chicken or mutton and cook until it is browned.
5. Stir in the yogurt, turmeric powder, red chili powder, garam masala, and salt. Cook for 5-7 minutes.
6. Layer half of the soaked rice over the meat mixture. Sprinkle half of the mint, coriander, green chilies, and black pepper.
7. Add the remaining meat mixture and top with the remaining rice. Sprinkle the rest of the mint, coriander, green chilies, and black pepper.
8. Add 2 cups of water, cover the pot, and cook on low heat until the rice is tender and the meat is cooked through.
9. Garnish with the reserved fried onions and serve hot.
