– 1/2 tsp baking soda
– Salt to taste
– Water
– Oil for frying
– For the pani:
– 1 cup mint leaves
– 1/2 cup coriander leaves
– 2-3 green chilies
– 1 inch ginger
– 1/2 cup tamarind pulp
– 1 tsp roasted cumin powder
– 1 tsp chaat masala
– Black salt to taste
– 2-3 cups water

Recipe:

1. In a bowl, mix together semolina, all-purpose flour, baking soda, and salt.
2. Gradually add water to the dry ingredients and knead it into a firm dough. Cover the dough and let it rest for 15-20 minutes.
3. Meanwhile, prepare the pani by blending mint leaves, coriander leaves, green chilies, and ginger with some water to form a smooth paste.
4. In a separate bowl, mix together tamarind pulp, roasted cumin powder, chaat masala, black salt, and water.
5. Combine the mint-coriander paste with the tamarind mixture to make the pani.
6. After the dough has rested, knead it again and divide it into small portions. Roll out each portion into thin discs.
7. Heat the oil in a pan and fry the rolled out discs until they puff up and turn golden brown. Remove and set aside.
8. To assemble the golgappas, gently make a hole in the center of each fried disc and fill it with the prepared pani.
