Oil – 2 tbsp + enough to saute and shallow fry
Ginger – 1 small piece
Garlic – 6 big cloves
Onion – 1 medium
Chilli – to taste
Turmeric powder – ½ tbsp
Coriander powder – ¾ tbsp
Pepper powder – ½ tsp or as per taste
Chilli powder – ½ tbsp or as per taste
Fennel seeds powder – ½ tbsp
Today let’s make a one pot recipe using wheat flour and potato chicken stuffing..
You can have this dish for either breakfast, lunch or dinner.
To prepare the masala, first heat some oil in a pan and add finely chopped ginger, garlic onion and chilli and sautè until it softens.
Once the onion softens, add ½ tbsp turmeric powder and sautè until its raw smell goes away.
Next, add ¾ tablespoon of coriander powder and sautè it as well.
Once the coriander powder is sautèed, add chilli powder to taste, along with some pepper powder..
You can add chili powder and pepper powder as per your taste. Keep in mind that you have added chilli as well.. once the spices are roasted well in the oil, add 250 gram of chopped boneless chicken and 250g of finely chopped potatoes, and mix well..
Next add some salt to taste and half a tablespoon of fennel seeds powder.
Now keep this closed, on a medium flame and let it cook.. you need not add any extra water to cook..
Since the chicken and potato are cut into small pieces, it will cook well.
You may stir it occasionally while its cooking..
Next let’s prepare the dough to make the outer layer of the snack.
To prepare the dough, add 2 ½ cups of wheat flour, along with some salt to taste, and 2 tablespoons of oil in a large mixing bowl and combine everything really well.
Once you have mixed the wheat flour, oil and salt, add enough lukewarm water to the flour and knead it into a smooth dough and let the dough rest for around 30 minutes.
Meanwhile , you may check if the chicken and potato are cooked well. Once the chicken and potato is cooked, mash it considerably well using a spoon into a creamy texture and let it cool down.
Now separate a huge chunk from the dough, and shape it again into a round neat ball. Place the ball on a surface which is greased with oil, and roll it out thinly using a rolling pin as you can see in the video.
After you have rolled thinly, spread the prepared chicken and potato masala on it and sprinkle some chopped coriander leaves.
The next step is to roll the dough with the filling from one side to the other and seal it on the other end by gently pressing it..
Give the roll final touches and modification using your hands and then gently stretch the roll as much as you can.. while stretching you may pull the dough from both the sides very gently without breaking it, using both the hands.
Once you have stretched the dough, roll it around itself to create a coil like shape.
rest the coil on a greased surface while preparing the rest of the snacks.
We can also add a little cheese with the filling as well..
Once the coils are ready, heat a pan and add some oil.. when the oil heats up, place the coils on the pan and cook it until it turns crispy on either side and it completely cooks through.
Once it turns golden from the bottom, top and the sides, transfer it into a serving plate and enjoy!
Just make sure to roll out the dough really thinly, before you add the stuffing.
You can cut each one of them into 4 pieces and roast them well again on the pan to get them even crispier..! I hope you enjoyed the recipe and give it a try!
