Ingredients:
For Chicken Yakhni:
– 1 whole chicken, cut into pieces
– 10 cups water
– 1 onion, chopped
– 2-3 garlic cloves
– 1-inch piece of ginger
– 2-3 green cardamom pods
– 4-5 black peppercorns
– 1 cinnamon stick
– Salt to taste

For Pulao:
– 2 cups basmati rice, soaked for 30 minutes and drained
– 1/2 cup oil
– 1 onion, thinly sliced
– 2-3 green chilies
– 1/2 tsp cumin seeds
– 1/2 tsp black cumin seeds
– 1/2 tsp black peppercorns
– 1/2 tsp garam masala powder
– 1/2 tsp coriander powder
– 1/2 tsp cumin powder
– Salt to taste

Recipe:
1. In a large pot, add the chicken pieces, water, onion, garlic, ginger, green cardamom, black peppercorns, cinnamon stick, and salt. Bring to a boil, then reduce the heat and let it simmer for 45 minutes to 1 hour, until the chicken is fully cooked. This will be your chicken yakhni (stock).
2. Once the chicken is cooked, strain the yakhni and set it aside. Reserve the chicken pieces for later use.
3. In a separate pot, heat oil and add the sliced onion. Fry until golden brown, then add the green chilies, cumin seeds, black cumin seeds, and black peppercorns. Saute for a few minutes.
4. Add the soaked and drained rice to the pot and mix well. Cook for 2-3 minutes.
5. Pour in the reserved chicken yakhni, garam masala powder, coriander powder, cumin powder, and salt. Stir gently, then cover and cook on low heat until the rice is tender and the liquid is absorbed.
6. Finally, add the reserved chicken pieces on top of the rice, cover the pot, and let it steam for 10-15 minutes.
7. Fluff the pulao with a fork, garnish with fresh coriander leaves, and serve hot.
