– 4 cloves
– 4 cardamom pods
– 2-inch cinnamon stick
– 1 bay leaf
– 1 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp biryani masala
– 1/2 tsp garam masala
– 1/2 cup ghee
– 1/4 cup oil
– Salt to taste

Recipe:
1. Rinse the basmati rice in water and soak for 30 minutes.
2. In a large pot, heat ghee and oil. Add the whole spices and sauté until fragrant.
3. Add the sliced onions and cook until golden brown.
4. Add the chicken pieces, tomatoes, green chilies, turmeric powder, red chili powder, and biryani masala. Cook until the chicken is browned.
5. In a separate bowl, whisk the yogurt with salt and garam masala. Add this to the chicken and cook for a few minutes.
6. Drain the soaked rice and add it to the pot. Mix gently without breaking the rice.
7. Add 6 cups of water and bring to a boil. Reduce the heat, cover, and cook until the rice is 90% done.
